Coconut Chocolate Banana Muffins

Who doesn’t love muffins? they are little cakes full of yumminess (I don’t even think that’s a world) The problem with muffins or baked good, especially those store bought is that they are full of sugar!  and not to mention some ingredients I can not pronounce.  I get it, not everyone has time to bake. Us busy moms need a break and the last thing we want to think about is baking.  Whenever i develop a recipe, the first thing I think about is, how quick can I get this done, and can I make it with whatever I have on hand, be delicious and will the boys eat it.  These are ‘the’ muffins!

I am  going to give you all the reasons why you should make these! First, they will take you under 7 minutes to prepare ( yup, under 7 minutes) and second, they only have 9 ingredients. The best part is they are HEALTHY!  Low carb, no refined sugar, gluten free, dairy free and high in fiber!   need more reasons???   didn’t think so!



  • 1/2 cup coconut flour
  •  2 bananas ( ripe)
  •  2 tbsp natural peanut butter ( optional)
  • 1 tbsp honey ( I use raw honey)
  • 1 tbsp unsweetened almond milk
  • 2 eggs
  • 1/4 cup of dark chocolate chips
  • 1 tsp baking soda
  • 2 tsp ground flax seeds ( optional)

Pre-heat oven to 350, line or grease a muffin tin.

In a small bowl, mix all ingredients.  Scoop into muffin tin and bake for 12-14 minutes
